<p><span style="color:#cc99ff;"><strong>600 g di piselli freschi(circa 200 g di peso sgranato),</strong></span></p>

<p><span style="color:#cc99ff;"><strong>250 ml di brodo vegetale, </strong></span></p>

<p><span style="color:#cc99ff;"><strong>Sgranare i piselli. Lavare le patate, sbucciarle e</strong></span></p>
<p><span style="color:#cc99ff;"><strong>tagliarle a cubetti di un centimetro circa di lato.</strong></span></p>
<p><span style="color:#cc99ff;"><strong>Scaldare il brodo. Mettere il pesto in una ciotola</strong></span></p>
<p><span style="color:#cc99ff;"><strong>capace di contenere la pasta cotta e coprirla per</strong></span></p>
<p><span style="color:#cc99ff;"><strong>evitare che il pesto di ossidi. Pulire lo scalogno e</strong></span></p>
<p><span style="color:#cc99ff;"><strong>tritarlo finemente. Farlo dorare in una padella</strong></span></p>
<p><span style="color:#cc99ff;"><strong>con l’olio a fiamma media, quindi unire i piselli,</strong></span></p>
<p><span style="color:#cc99ff;"><strong>mescolare e cuocere un paio di minuti girando</strong></span></p>
<p><span style="color:#cc99ff;"><strong>continuamente. Unire un paio di mestoli di brodo,</strong></span></p>
<p><span style="color:#cc99ff;"><strong>un pizzico di sale, una grattugiata di pepe e</strong></span></p>
<p><span style="color:#cc99ff;"><strong>cuocere per 15 minuti a fiamma media, coperto,</strong></span></p>
<p><span style="color:#cc99ff;"><strong>girando di tanto in tanto. Lessare la pasta in</strong></span></p>
<p><span style="color:#cc99ff;"><strong>abbondante acqua salata assieme alle patate a</strong></span></p>
<p><span style="color:#cc99ff;"><strong>cubetti. Quando è cotta ritirarla con una ramina</strong></span></p>
<p><span style="color:#cc99ff;"><strong>forata direttamente nella padella del condimento,</strong></span></p>
<p><span style="color:#cc99ff;"><strong>quindi accendere il fuoco. Saltare la pasta scolata</strong></span></p>
<p><span style="color:#cc99ff;"><strong>a fiamma vivace nella padella del condimento per</strong></span></p>
<p><span style="color:#cc99ff;"><strong>qualche minuto, girando di frequente. Metterla</strong></span></p>
<p><span style="color:#cc99ff;"><strong>quindi nella ciotola del pesto, mescolare e servire</strong></span></p>
<p><span style="color:#cc99ff;"><strong>immediatamente decorando con foglie di basilico</strong></span></p>

<p><span style="color:#00ffff;"><strong>sale, pepe e cannella. Aggiungete il succo di</strong></span></p>
<p><span style="color:#00ffff;"><strong>limone, l&#8217;uvetta precedentemente ammorbidita in</strong></span></p>
<p><span style="color:#00ffff;"><strong>acqua tiepida e mescolate bene il tutto facendo</strong></span></p>
<p><span style="color:#00ffff;"><strong>cuocere per pochi minuti bagnando con il brodo</strong></span></p>

<p><span style="color:#00ff00;"><strong>con le fruste elettriche, aggiungere a filo lo</strong></span></p>
<p><span style="color:#00ff00;"><strong>sciroppo non troppo caldo, esattamente in centro</strong></span></p>
<p><span style="color:#00ff00;"><strong>al composto che state sbattendo. Montare la</strong></span></p>
<p><span style="color:#00ff00;"><strong>crema a zabaione su un bagno maria non troppo</strong></span></p>
<p><span style="color:#00ff00;"><strong>caldo, facendo attenzione che il contenitore non</strong></span></p>
<p><span style="color:#00ff00;"><strong>tocchi l&#8217;acqua sottostante. Quando si è raggiunta</strong></span></p>
<p><span style="color:#00ff00;"><strong>la cremosità dello zabaione, senza smettere di</strong></span></p>
<p><span style="color:#00ff00;"><strong>sbattere passare il polsonetto in una ciotola</strong></span></p>
<p><span style="color:#00ff00;"><strong>contenente acqua fredda e ghiaccio e continuare</strong></span></p>
<p><span style="color:#00ff00;"><strong>a sbattere fino al raffreddamento. Montare la</strong></span></p>
<p><span style="color:#00ff00;"><strong>panna, che non deve essere troppo soda, e</strong></span></p>
<p><span style="color:#00ff00;"><strong>incorporarla delicatamente al composto. Infine</strong></span></p>
<p><span style="color:#00ff00;"><strong>amalgamare la frutta candita, un poco di julienne</strong></span></p>
<p><span style="color:#00ff00;"><strong>di arance e le mandorle. Versare il tutto nello</strong></span></p>

<p><span style="color:#ff6600;"><strong>PREPARAZIONE</strong></span></p>
<p><span style="color:#ff6600;"><strong>Pulire i cipollotti eliminando le radichette, lo strato più esterno e lavarli sotto acqua fresca. Affettarne la </strong></span></p>
<p><span style="color:#ff6600;"><strong>parte bianca.</strong></span></p>
<p><span style="color:#ff6600;"><strong>Lavare le carote, spuntarle ed affettarle nello spessore di 2-3 millimetri.</strong></span></p>
<p><span style="color:#ff6600;"><strong>Scaldare il brodo.</strong></span></p>
<p><span style="color:#ff6600;"><strong>Mettere in una pentola da minestra l&#8217;olio e i cipollotti. Farli dorare su fiamma media, quindi unire un paio </strong></span></p>
<p><span style="color:#ff6600;"><strong>di cucchiai di brodo vegetale e cuocere per un paio di minuti.</strong></span></p>
<p><span style="color:#ff6600;"><strong>Unire le carote, mescolare e lasciar sfrigolare per qualche minuto.</strong></span></p>
<p><span style="color:#ff6600;"><strong>Aggiungere 1 mestolo di brodo vegetale, un pizzico di sale, una grattugiata di pepe e cuocere per 10 minuti </strong></span></p>
<p><span style="color:#ff6600;"><strong>a fiamma media coperto. Mescolare di tanto in tanto ed aggiungere altro brodo vegetale se il fondo di </strong></span></p>
<p><span style="color:#ff6600;"><strong>cottura dovesse asciugarsi troppo.</strong></span></p>
<p><span style="color:#ff6600;"><strong>Trascorso il tempo di cottura scoperchiare, far asciugare eventuale liquido in eccesso ed unire il riso.</strong></span></p>
<p><span style="color:#ff6600;"><strong>Farlo tostare per un minuto, quindi unire 4-5 mestoli di brodo bollente e impostare il timer secondo i </strong></span></p>
<p><span style="color:#ff6600;"><strong>minuti di cottura del tipo di riso che si sta usando (solitamente 15-18 minuti).</strong></span></p>
<p><span style="color:#ff6600;"><strong>Continuare unendo il brodo man mano che viene assorbito, mescolando di tanto in tanto, senza lasciare </strong></span></p>

<p>Ingredienti: 800gr. patate, sale, 200gr. prosciutto cotto magro, 100gr. burro, noce moscata, 1 cucchiaio salsa pomodoro, 2 tuorli, pepe.<br />
Sbucciate le patate, lavatele e lessatele in acqua salata. Nel frattempo tritate molto finemente il prosciutto cotto. Scolate le patate e passatele allo schiacciapatate, raccogliendole nello stesso recipiente di cottura, conditele con una noce di burro (25gr.) e rimettetele sul fuoco, rimestatele con un cucchiaio di legno fino a che avranno perso ogni traccia di umidità. Togliete quindi le patate dal fornello e incorporatevi il prosciutto cotto, la salsina di pomodoro, i due tuorli, un grosso pizzico di pepe e un pochino di noce moscata grattugiata. Con il composto ottenuto, passato poco per volta attraverso una tasca da pasticceria, formate sulla piastra del forno imburrata delle piccole piramidi a spirale, che spennellerete con il restante burro fuso e infornerete a 180° per 15 min. Trascorso questo tempo, prelevate le patate con una palettina, disponetele sul piatto da portata e servitele subito, ben calde.</p>

<p><span style="color:#ff6600;"><strong>Le cozze: raschia la buccia per eliminare tutte le impurità, elimina le barbe, lavale accuratamente e </strong></span></p>
<p><span style="color:#ff6600;"><strong>mettile ad aprire in una padella con 1 cucchiaio di olio ed 1 spicchio di aglio intero, ma appena schiacciato. </strong></span></p>
<p><span style="color:#ff6600;"><strong>Appena le cozze si saranno aperte, sgusciale e mettile da parte, conservando anche il liquido di cottura, </strong></span></p>
<p><span style="color:#ff6600;"><strong>che dovrai filtrare. La cipolla: mondala e fanne un trito che lascerai appassire in 4 cucchiaio di olio, poi </strong></span></p>
<p><span style="color:#ff6600;"><strong>aggiungi i filetti di nasello ridotti in dadolata e falli rosolare, aggiusta di sale, insaporisci con il pepe a tuo </strong></span></p>
<p><span style="color:#ff6600;"><strong>gusto, poi unisci le olive nere senza togliere il nocciolo, la passata di pomodoro e il liquido di cottura delle </strong></span></p>

<p><span style="color:#ff6600;"><strong>minuti, ricordandoti di girare ogni tanto con un cucchiaio di legno. Nel frattempo, metti una pentola sul </strong></span></p>
<p><span style="color:#ff6600;"><strong>fuoco con l&#8217;acqua, appena raggiunge il bollore aggiungi una presa di sale grosso, lascialo sciogliere </strong></span></p>
<p><span style="color:#ff6600;"><strong>qualche secondo, poi metti a cuocere i fusilli. Appena gli spaghetti saranno cotti, scolali e trasferiscili nel </strong></span></p>
<p><span style="color:#ff6600;"><strong>tegame con il sugo, unisci le cozze messe da parte e lascia insaporire bene tutto, a fuoco vivo. Per finire </strong></span></p>
